Chicken-Baked Chops in the Crock

Hope this little recipe catches your eye! It is not hard to make – the slow cooker does most of the work. Coupled with Mashed potatoes and some roasted fresh green beans, this makes a great beginning of Autumn meal.
Slave is just not one who loves the cooler weather. No more bare chested men running around outside brightening the scenery. No, to slave, this cold weather is only good to kill the bugs! Geeze, when did I turn into such a grumpy old man?



Get out your “cut & paste”ers. This recipe is so simple, slave will include a bunch a great tips that will make your life chained in the kitchen so much easier.




Ingredients

  • 4 bone-in pork chops (½ inch thick)
  • 1 tablespoon vegetable oil
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • ½ sliced onion
  • ½ cup water
  • 3 tablespoons Worcestershire sauce
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • 4 – 5 red potatoes for mashing – see “Mikl's magic mashed potatoes”
  • 1 lbs fresh green beans

Directions

NOTE: Any time you use a crock pot, slave suggests you do any cutting with sharp knives the night before! It is just so much easier! That way you cut, wrap, then dump. First slave always wipes out the crock pot with a damp paper towel and sprays with cooking spray. Then turn it on covered while you get the things lined up to add. It just makes life easier if you do.
Now last week slave got a good deal on pork chops but did not want to use them right away. Often you save money if you buy meat in a quantity, then freeze to use later. When you do this, remember to not use the container the meat came in. (save the label if you wish)
Portion it out. Not only does the smaller package of meat freeze better, it is then easier to thaw and use just what you want.
Rinse, dry, wrap in plastic wrap then put in a zipper bag for the freezer. 
 
Also invest in one of those metal “thawing trays”. It is so much better than using the microwave – which quickly turns the meat into rubber.

  • saute in medium low skillet to caramelize the onion



















    # The thing to remember here is you don't want to hear the onion sizzle when it hits the pan. If that happens, the pan is too hot. Anytime you use a slow cooker, always at least “sweat” the veggies first. That means heat them just until you can smell them, the aroma will come right up and hit your nose. That releases so much more flavor when added to stews, soups, or whatever. Cooking them longer will “caramelize” them. That means the natural sugars will come out and start to turn brown. In the case of onions, my goodness, its almost like candy. In fact you can make a great marmalade out of caramelized onions! This will take about 25 minutes. Again this can be done the night before. By using a thawing tray, the pork chops were completely thawed in the time it took to do the onions.

     

     remove with slotted spoon to drain on paper towels
  • Raise heat in a skillet, then brown the pork chops on both sides. This goes quickly as you only want to turn the color from a reddish pink to a nice golden tan. They will cook in the pot.



  • In a medium bowl mix together the condensed soup, soy sauce, water, and ground ginger. Whisk to combine well.







    # Any time you have to get any gloppy stuff from a can, PLEASE use a wooden spoon! This keeps down any metallic taste.
  • Spoon just a bit of this into the crock pot to lay your chops on. (this will keep them from sticking)


    Spread the onions on top and pour the soup mix over.





Cook on low for 5 to 6 hours.

# If you would like gravy for mashed potatoes: mix 2 Tbs corn starch with 2 tbs water and add to pot, raise heat to high for the last ½ hour or until thickened.

# This may also be baked at 350° for 1 hour or until meat
juices run clear.
Wine: Enjoy this recipe with a light-bodied red wine such as Pinot Noir.




Slave served these fork tender chops with mashed potatoes and roasted green beans. Talk about NUM NUM!

Master gave a gift today,
much more fine than gold.
A gift of time and effort
too precious to be sold.

Its what I love the most in life
it fills my heart with joy
He allows me to rejoice
in just being His toy.

I get to drop my walls
I'm let to open doors
His energy now can tour
deep into all my stores.

So slow this body does react
sensations cold and warm
What was identified as pain
now takes another form



It is now my Master's power
I feel a strength of storm
It surges deep within
as ice turns into warm.

How does He understand
the bliss that now I know?
Hush” my Master says,
just let your feelings flow”



To welcome invasion I submit
He gently pushes past
involuntary resistance
halfheartedly can't last

I cause each muscle to relax
To Master's power wave
a fuller consummation
I can not wish nor crave.

How wonderful it feels
to relax and let it flow
He enters every cell
And very deep I know




His presence is there
He does belong.
A virtuoso playing
and body responds in song

To slightest touch
I cry out strong and loud
a voluntary victim
His slave, so very proud.

Sweet Garlic Chicken

Sweet Garlic Chicken

Here is a simple meal that tastes like Jacques Pepin ran smack-dab intro Grannies iron skillet! Cheap to buy, easy to fix, and fast to throw together. What more could you ask for?



Surprisingly few ingredients, many of which may already be in your pantry.


Ingredients

4 boneless skinless chicken breasts
1 cup low fat buttermilk
3 tbs low fat honey-mustard dressing.
4 garlic cloves, minced
4 tablespoons brown sugar
1 tablespoon olive oil
additional herbs and spices, as desired

slave serves this with some roasted pencil asparagus and breaded tomatoes.
Breaded Tomatoes:
1 14.5 oz can stewed tomatoes drained.
½ cup chopped onion (had in freezer)
2 tbs brown sugar
3 pieces of bread torn-up.


 

Directions

Night before:
Rinse the chicken, pat dry and put in zipper bags with buttermilk and dressing. Turn over once during the evening.


Day Of:
1 - Preheat oven to 450°F Line a baking dish or cookie sheet with aluminum foil and lightly coat with cooking spray.

Mince (cut up into tiny pieces) the garlic. Spoon out 4 tbs of brown sugar.












In small fry pan, Heat the oil and add garlic, stir and watch because it can burn quickly. Just let it turn a nice tan color. You will know when it is ready because you will be able to smell the garlic!










Stir in the brown sugar and remove from heat. Stir until well mixed together.
Drain the chicken, rinse and pay dry. Space the pieces on the cooking tray and spoon the brown sugar-garlic mix equally on each. Just let it sit on top for now and slide it into the oven.

Let that bake for about 20 minutes or until the chicken has reached 165 to 170 degrees on an instant read thermometer.
Open the oven door and turn it to broil just long enough to melt any left over brown sugar mix on top.


Remove and cover with foil to let rest for 10 minutes! This is important.







The tomatoes can be drained, put in pan with chopped onions and brown sugar to let heat at any time while the chicken is baking.

When the mixture is bubbling stir in the torn bread and mix well. This is heaven.
Slave served this with roasted asparagus.
The breaded tomatoes are a cheap side that will not only taste fantastic but the colors will look so pretty with the dark green of the asparagus and the blonde tan of the chicken. But most of all these flavors blend into a fine mix of haute cuisine and down home cookin that can't be beat!

UpDates Rituals and Ceremonies

First let me thank you for your comments on the collar as well as your personal experiences. Out of respect for your desires, slave will not mention particulars other than to say how moved I am that you would share these with me. I totally agree that a collar is NOT just some accessory to complete the outfit. That it means nothing without the connection, as well as being at the right time! These are things you only find out through experiences. As “leas***g” would say: “You want the connection not the status symbol”.

It has only been a couple of days, but already slave can notice the homemade Vanilla Extract is starting to darken. It was a long way to go in Eight weeks until it becomes that delicious dark brown marvel. Already slave is researching recipes for just the right combination to prepare for the Holidays.

Rituals and ceremonies

“Focus” Master ordered.

Focus? Focus on what? What does He want me to do? Think?: What am I supposed to be thinking about?

That scene had played out several times during the first year of my being a slave. It took a long time to figure out and to understand. To learn first hand and on a gut level what could not be “taught”. To hear what could not be said. That is true knowledge.

Today, when I hear people say: “We don't believe in ceremonies”, or “rituals are just stupid”, my reaction is to feel that they are neglecting important tools. There is a reason that religions have used ceremonies since time began. A reason that so many sports champions have little rituals that they feel compelled to do before every contest. Every student in college has tried some odd thing (except study) to make a better grade on a test. Most times we never even stop to consider why. We just know we have to do it.
I have had many a therapist tell me that is just “magical thinking”.

I believe they are missing the point. Ceremonies and rituals can serve as a filter. They allow us to put our minds on one thing and to let other thoughts fade away. Following a certain ritual can put us in a “mindset”. They can force a perspective to a certain extant. They screen out distractions which attack from every corner. In today’s environment, we are bombarded with these more than ever in history. It is only then we can learn.

If we need to do some psychical task, our minds will be on that performance. How often have we heard some athlete say: “I can't think about what the other guy is doing, I just focus on what I can achieve and think about the other things later”. This allows them to do the best they can. You can almost bet they have done some small thing they might even call a superstition before each event.

This is no different than facing the everyday tasks and duties. Having a certain ceremony before bedtime will make it easier to sleep. Having a “morning routine” makes starting the day go faster and reduces the chances of forgetting something.

For myself, I know when times are rough or I am down, having a set order to follow will help me change perspective. I can get things done when I follow a procedure. That is all a ritual or a ceremony is. A path, a guideway: a “do this first, then this, then this”, that forms a GPS to handle our lives.

Yes, like anything else, people can take it to an extreme. But you see that thought is in itself a distraction.

How can tapping your forehead three times help you think of the right answer? Simply this: that action distracts the distractions! It filters out the noise, takes away the clutter, clears out the un-necessary so that what you need is plain to see.

Soon, I shall go through my daily morning ritual that lets me get my mind facing the right direction. This morning, before leaving, Master ordered me to find the time for an hour wearing my shackles and to report. 

He knows this is a treat for me, I love wearing them. He wants me to sit and focus. To clear my mind of distractions because then I will find meaning, direction, answers, whatever I need at that time will be there for me. Afterwords He will want a full report. 

Is it “magical thinking” to believe that wearing metal bands on my wrists and sitting with my eyes closed will cause my thinking to clear? Of course not! It does precisely that.

“Follow the steps, do them in order”. That is the only way things get done. It is the same, wither you are a pilot of a giant airliner, an astronaut, or a cook with a recipe.

Ceremonies and rituals are your filters and GPS for life and they are free! You need no expensive equipment. Just learn them and follow them.  

Following certain steps in order can also bring solace to an aching heart, sooth a fevered brain, Even help bring your world back to a state of normalcy after a traumatic experience.

Let slave urge you. If you do not have certain rituals, make one! Use these important tools to help but do not make them your purpose. Rely on these to help you walk, but do not give up on the walking itself. They can allow you achieve more than you ever dreamed of.

La Dolce Piggy
Here is a juicy Italian take on the great classic Pork Chop! Super easy, not much to clean up after. Perfect for these first fall evenings when it turned just a bit colder than you had expected.





Slave suggests serving this with green beans & almonds. These are not really flavored and their clean taste balances nicely. If you like melted cheese on your tomatoes, use a grated provel or other Italian. Here slave uses Parmesan which just does not like to melt and get gloppy.




















Ingredients:
2 Pork Chops*
Bottled balsamic vinaigrette dressing
4 tbs. brown sugar
3 – 4 tbs bottled ranch dressing
1 cup dry Italian bread crumbs.
1 small package dry Italian dressing mix.
1 tbs dry powdered garlic.
3 tbs grated Parmesan cheese.+ a touch more
2 large tomatoes
1 pkg frozen green beans with almonds

*May slave suggest you use the thicker (about ¾ – 1 inch) bone in chops for this. You can use the butterfly chops or boneless – just reduce the oven temps to 350 for the thinner chops.

Directions
The night before:





Rinse the chops and pat dry: put into plastic bags with some of the Balsamic dressing and 2 tbs of brown sugar each. Note that I held them by the “tail” when I placed them in the bag. It was just easier that way. Let them marinate overnight in refrigerator.
That day:
Pre heat the oven to 375 degrees. Line a rimed baking sheet with foil and spray with cooking spray.
Cover the counter with a sheet of wax paper – this will make clean up so much easier.
Rinse the chops off and pat dry.
In a shallow bowl, stir together till well mixed: the powdered dressing mix, bread crumbs, cheese, and powdered garlic.
In a second bowl, pour out some of the bottled ranch dressing. (maybe 3 – 4 tbs)


Now set up your assembly line: with chops, wet dressing, dry mix and sprayed pan.
Take a chop, coat with dressing, press into bread crumbs, then place on pan.

Slide them into the oven to bake for about 40 to 45 minutes. You want to check them with an instant read thermometer. The thickest part should reach 150 to 155.













Once the chops are in the oven, wash the tomatoes. Cut off any stem or green part. Cut in half around its waist. Slave likes to cut it into v shaped groves just to look pretty and hold a bit more breading. Add another 2 tbs of cheese to what is left of the breadcrumbs. Set the halves with the face up on a plate. Sprinkle some cheese on each. 

 
Spoon out equal amounts of the breadcrumbs, then cover with plastic wrap and let sit until the chops have been in for half an hour. Remember, If you want melted cheese, use a grated cheese, not Parmesan. Then remove the plastic and place them around the chops and let finish baking.


Take out of oven, cover loosely with a sheet of foil and let rest for about 7 to 10 minutes. It will finish cooking and draw the juices back into the meat.
HINT: Do not omit this resting time.

Most brands of frozen green beans will do perfectly. Follow the instructions. Start them in the microwave right after you take out the meat.
Slave is often asked: why didn't you add some parsley? Or why not some basil or oregano? All of these are fine ONCE you know your spices. Try other combinations but only after you have followed the recipe once!
Slave uses the dry Italian dressing mix. Not only are all the right spices in there, they are in the right proportions. You should not have to buy a whole jar of ground rosemary when you will only need less than ¼ teaspoon of it.
That said, there are times when you should not buy a mix. For example: onion soup mix. This is very handy and can be used on a variety of things for better taste. However the store bought mix is FULL of salt. Just mix your own and keep in an air tight jar for months! That way you can use only the amounts you want. Just remember to shake it up well to remix it every time.
Salt Free Onion Soup Mix:
3 tbs dried minced onion (or flakes)
4 tsp. instant beef bouillon powder – sodium-free (slave uses Herb Ox)
1 tsp. onion powder
¼ tsp celery seed
Combine ingredients and store in air tight container.
You can double or triple this easily.

By now everything should be ready for the table. Serve the chops on a platter surrounded by the bright tomatoes. Wine of your choosing would compliment this dinner nicely.

My Collar

You can't imagine the questions I get about being a slave. I am proud of my status and self-identity. Most questions I have no problems answering. However I will not take anyone's hatred or abuse. I simply have no time to waste on that.
Let me tell you about my collar. I am so proud of being able to wear my Master's collar 24/7. In fact, it is only off of me when showering and shaving.
To me it is an outward sign of the connection between me and my Master Indy. It is a symbol that connects me with a past that goes back thousands of years. With a big difference in that my slavery is consensual! It is a life that I had never considered yet was so very right that I knew it instantly.
My shackles often feel as if they are antenna focusing the energy of a universe into the wrists that were made for them. My collar is different.
I guess it is different for every slave, yet just as strong a connection and symbol. It is said that the collar is always on wither it is in place or not.
There are times, I wish mine were visible to the general public. So that every man, woman and child could see that I wear it proudly and am happy with it.
However my Master has chosen a different collar for me. It is a private collar. It is for me to feel constantly, yet shared with only Him.
He explained it by saying that seeing a collar on my neck does nothing for Him. What He wants, is to see the reflection of that collar. That is what He wants to be shown. My actions, my deeds, my attitude, and my work must reflect the fact that I wear HIS COLLAR. That is the public display He wishes me to put on.
You see after all, it is in the fulfilling of His wishes, His wants, and His desires, that my life has the greatest meaning. It is the highest goal I can attain. That is my joy.
Let me tell you, at times, it does feel alive. It is like a warm encircling hand that can wake me from a deep sleep and drag me out of a recliner. At other times, it is a cold, hard reminder that underneath the facade of a freeman there is a slave. I am a piece of owned property. Something that belongs to someone else and I had better take good care of it.
So I tend to it like it were my Master's automobile, or His fine silver, or even his most ragged pair of jeans that need mending.
If we meet, the chances are, you will not see the shiny metal collar my Master has me wear. But it is there. Just exactly where it needs to be. It is for Him. It is for me.
