Angie
is one of the many card sharks that sit and play card until all hours
of the morning. However she can not partake in the sweets to snack on
because of her diabetes. So slave thought why not do something
special just for her?

These
cheesecakes done with whipped topping and pudding mix are so easy,and
will satisfy the sweetest of teeth!
1
(8-oz.) Fat Free Cool Whip, thawed
3
boxes (1 oz) Sugar Free & Fat Free chocolate instant Pudding
1
pkg. Low fat cream cheese, softened
1½
cup skim milk (½ cup for each box)
Prepared
reduced fat graham cracker crust
No
Sugar Added cherry pie filling
Sugar
free chocolate syrup

Directions:
Cut
the softened cream cheese into small bits and beat until soft.
then
beat in the instant pudding mix.
Add
the milk and beat until smooth.
Fold
the thawed topping into this a few spoonfuls at a time. You want to
keep it fluffy!
With
a spatula spread this into the prepared pie crust.
Open
the pie filling and dish out the cherries with a slotted spoon, you
won't need all of the gooey stuff, but get as much of the cherries as
you want to top the cheesecake. This will be heavy and tend to sink
into the mixture. The only way around this is to let it chill for 2
hours before spreading the cherry mixture on top. However Angie,
while sweet, is not known for her patience! Besides this IS
“chocolate covered”.
Cover
and chill for between 1 to 2 hours.
Serve
by cutting a piece and drizzling the chocolate syrup over the top for
a chocolate covered cherry cheesecake!
Have
a nice slow dance while this chills.
