The
other day slave was facing a full refrigerator. Lots of left overs
from the week. So this was thrown together. It seemed appropriate
for the holiday coming up to name this for the remains of previous
lovers.
IT
is an easy dish with many things you might already have on
hand. Always “think out side of the box based on what is
inside of the pantry.
½ Pkg fresh mushrooms
1/4
lbs sausage
10 left-over meat balls
½
cup chopped onion
1pkg
fresh spinach
4
large eggs
Directions:
Do your cutting: since
most of this was left over
from other recipes, there is little
to do. Chop onion
and the rinsed mushrooms into ¼ inch
pieces. Cut
each meat ball into fourths!
Heat oil in a skillet
over medium heat and add
onions stirring until they are
turning transparent.
Add the mushrooms and the sausage,
cooking that
for at least 8 minutes. As you stir this, break
the
sausage apart into bits.
Once
the moisture is cooked out of the mushrooms
and the sausage is
done, add the quartered
meatballs.
spinach but it is not necessary.
The spinach is added by
small handfuls to the
skillet and stirred in until each almost
disappears.
This bag took 5 handfuls, so give it time.
Turn
the heat down to low, cover and let sit for 12
minutes.
Break an egg onto the top
of the mixture, in the
four corners. Cover and watch
this cook. Bring
the eggs to the desired doneness. (Some
prefer an
orange runny yolk, some a full hard cooked egg).
