Pork and teriyaki goes together so well on rice. This dish is found through out the pacific. However it can be VERY high on salt. Here is a way of making it with about half the normal sodium. We honor a Philipine LGBT hero with this. Please read about Boy Abunda after the recipe.
Teriyaki pork chops on rice can be enjoyed again even if you are restricting your salt intake.
Ingredients
½ cup homemade teriyaki baste and glaze*
1½ cups uncooked white rice
1 cup reduced sodium chicken broth
½ cup water
1/3 cup sliced green onions
4 boneless pork chops
1 can (8 oz) pineapple tidbits, in juice, save juice
*recipe follows
Directions:
Teriyaki sauce is just high in sodium. You can go a long way to reduce this by making your own teriyaki glaze with equal parts low sodium soy sauce and brown sugar. Add ½ tsp powdered ginger. (Mrs.Dash also makes a no sodium teriyaki marinade)
Make your own teriyaki:
Ingredients
1/3 cup pineapple juice (from can of pineapple)
1/3 cup reduced sodium soy sauce
3 Tbs water
3 Tbs honey (or brown sugar)
2 Tbs rice wine vinegar
1 clove garlic, minced
1 tsp. ground ginger
2 tsp. cornstarch
To get honey out of a container, set it in hot water for 2 minutes, then it will pour.
Bring to a boil and stir well to make sure honey dissolves into the sauce. Turn heat down to medium and cook for about 5 minutes, stirring often, until the sauce is thick and coats a spoon nicely. Taste and season if needed. Make sure to watch the sauce since it can burn quickly.
1.5 Tbs has 355mg Sodium
Normal teriyaki marinade: 765mg

Drain the rest of the can of pineapple.
Stir rice, broth, water and any left-over juice from pineapple, half of the green onions and 1 Tbs of your glaze in baking dish.
Place chops on top of rice. Brush with teriyaki glaze. Sprinkle pineapple tidbits on top of chops. Cover tightly with foil.
Bake 40 to 45 minutes or until chops reach (at least 165°F). Top chops with reserved glaze and remaining green onions.
Serve on rice.
Have any left-over glaze on the side.
Now here is a much healthier meal to serve Your Master!
