The
key way to cope with social distancing is to stay mentally active and
exercise regularly. Get around to reading that book you bought but
never opened, play some old board games you put up years ago. Watch
an educational Youtube video. But most importantly look for things
throughout the day that give you joy. This picnic inspired meal
should help bust the gloom.
Picnic
Pork Steaks, slow cooked with smoky paprika imparts a smoky flavor
and invokes memories of great times. Let the oven do the work for
you. Fix a quick side of white rice for the sauce and microwave a
green vegetable while the meat rests.
Ingredients
About
3-4 lbs Pork Steaks One per person*
1
small onion sliced
4
cloves garlic, chopped
roll
of aluminum foil
RUB:
½
cups brown sugar
2
Tbs onion powder
2
teaspoons sweet paprika
1
Tbs kosher salt
1
tsp pepper
1
Tbs garlic powder
BBQ
SAUCE:
½
onion finely chopped
1
clove garlic minced
¾
Cup brown sugar
1½
cups bottled barbecue sauce.
*If
your store does not carry “pork steaks” ask for pork butt roast
sliced in 2 inch slices. “Butt” refers to back in the 1800's
this part of the pig was shipped in wooden kegs called “Butts”.
Directions
Preheat
oven to 225 degrees.
Line
a baking pan (with sides at least 2 inch deep) with foil and spray.
In
a small bowl mix together all dry rub ingredients, set aside.
Slice
the onion and chop the garlic.
Dry
the steaks off with paper towels. Using a sharp knife, cut out the
odd shaped bone. This makes it so much easier to serve coated with
sauce!
Lay
out a long piece of foil on the counter. Place half of the onion
slices and half of the chopped garlic in a line the shape of the
meat. Pour about a fourth of the rub on this and place a piece of
meat on top.
Pour
another forth of the rub on top and work it into the meat.
Wrap
this up with foil side to side. Then wrap it again end to end to seal
it well and place in the baking pan.
The
meat will braise in the mixture made from its own juices and that dry
rub.
Bake
for 5 hours,
then remove from oven.
Turn
oven temperature up to 350 degrees.
Carefully
open the foil from top of steaks and drain excess liquid.
Top
with your BBQ Sauce and bake uncovered for another 1½ hours. If
steaks start to get too dark cover back with foil and continue
baking.
If
a Crust is desired, spread with sauce and put under broiler for 10
minutes per side.
Take
meat out to let rest while you microwave the green vegetable.
Serve
with a plain side of white rice, (great with BBQ sauce mixed it)
It
is easy to forget the gray chilly skies with the taste of an outdoor
Bar Be Cue spread on the table.
