Switch Dinner

Tonight I found myself facing a pound of ground chicken, what to do? Well I also had a box of tuna helper dinner with cheese. Normally chicken can be substituted for tuna but I could not imagine it working with a yellow cheese. So time for some imagination.


Ground chicken, pasta, onions and mushrooms do play well together in this mix it up meal. Try something new, play with tastes that you know will work together and create your own masterpiece.


Ingredients:

1 Lbs ground chicken

1 box tuna dinner

1 red onion chopped

1 can mushrooms bits & pieces, drained

1 can cream of bacon soup

1 cup milk

1 cup water

1 tsp Old Bay Seasoning


Directions:

Chop the onion.

Heat 1 tbs oil in skillet and add the chopped onion. Sprinkle with Old Bay Seasonings. Add the drained mushrooms. Stir until onions start to turn transparent.


Add in the ground chicken. Cook it for at least 8 mins, it wont really get very brown but it will be cooked.


Cook until most of the moisture is gone from the mushrooms and everything is smelling good.


It a large bowl, mix the water, milk, and bacon soup until blended.

Open the box dinner and pour the pasta into the skillet, set the rest of the contents back for later use. For this you only use the pasta. Pour the soup mix on top and stir it in making sure all of the pasta is covered with soup.

Cover and let cook stirring occasionally for 10 mins or until the pasta is fully cooked.

Serve with a green vegetable. Slave found a foil wrapped loaf of garlic bread that heated in the oven nicely.

What an interesting change of pace meal for this winters day.
