Upside-Down Baked Apple Cake


We have reached the desert for our Masters Banquet. This unique take on the old upside-down cake will be perfect for the season. You might want to make it again for other unexpected guests over the holidays. You will note in pictures the apples were not peeled. slave recommends that you peel them for a better desert!


This cake comes out showing you just where to cut and where to add the topping of your choice. Whither that is Rich Vanilla Ice Cream, or non-fat whipped topping, or even a hot caramel sundae topping!



Ingredients
  • ½ cup butter, cut up
  • 6 very small red cooking apples (1¼ to 1½ lbs total)
  • ½ cup packed brown sugar
  • 1 16.5oz box spice cake mix
  • ½ cup water
  • 1/3 Cup unsweetened applesauce
  • 4 eggs
  • 1 teaspoon vanilla
thawed whipped topping

Directions
1. Preheat oven to 350 degree F.


Wash apples removing stems, peel them and cut in half down the center. Using a melon baller or small spoon, scoop out apple cores. Place in bowl covered with damp paper towel. You will be using 9 of these halves, the other 3 halves will be coarsely grated. Always spray the grater with cooking spray before you use it.


Cover the grated apple, it will still turn color, but you will not notice it when baked.


Cut the stick of butter into pats and place in a 9 x 13 inch baking pan. Put that in oven about 5 minutes or until butter is melted.

Remove the pan from oven. Sprinkle the brown sugar over melted butter; stir to combine. Spread evenly over bottom of pan.



Arrange nine of the apple halves, cut sides down, in butter mixture. 
Bake for 15 minutes or until butter mixture is bubbly and the apples have softened. This is important for your dessert to be the best it can be!



In mixer blend the cake mix with water, eggs, vanilla, and applesauce, following the box instructions for low fat cake.


Spoon the shredded apple around the halves. Then spoon batter over apple halves in pan, spreading evenly (some apple may still be exposed and some butter might come up).



Bake about 30 minutes or until a toothpick inserted near the center comes out clean. Cool cake in pan on a wire rack for 5 minutes.


Using a sharp knife or narrow metal spatula, loosen edges of cake from sides of baking pan. Carefully invert onto a large serving platter. Spoon any butter mixture remaining in pan onto cake. Let Cool.

Cut into squares with an apple in each and place on a dessert plate. Cover with plastic wrap and refrigerate until serving time. Then remove wrap. Some of the sugar mixture might be lost. If so sprinkle with another tbs of brown sugar before adding the whipped topping and dusting each with cinnamon.
Or maybe some vanilla ice cream? Or hot caramel sundae topping?


Slave just knows that this will be the best finish to an already great dinner. You have presented a wonderful evening. And nobody has to know that you don't know how to cook!
