When
our high temperatures dropped over 35 degrees, slave thought that a
nice cheap hamburger soup would be great to keep the insides warm.
However at the store it found that top round roast was cheaper than
hamburger. Unbelievable. However when you find something like this go
with it!
This
still makes a great warm meal and a nice diversion to all of the
turkey that this month brings.
Ingredients
2 pounds beef chuck, cut into 1½-inch pieces
1/3 cup all-purpose flour
1 pound small red potatoes, cut into chunks
3 medium carrots, peeled and cut into 1-inch chunks
1 medium onion, chopped 3 cloves of garlic, chopped
3 cups low-sodium beef broth
1 pkg frozen mixed vegetables.

Directions
Wipe
out slow cooker and spray with cooking spray, set heat to low and
cover.
Cut
up the onion, celery, carrots, garlic, and beef.
Heat
2 tablespoons of the oil in a large nonstick skillet over medium-high
heat. Add the beef and brown each side, (about
3 minutes per side).
This
step is not about cooking, it is about color!
Not just to make it look good, but when the meat browns, it causes
chemical changes. This creates natural flavors from the meat that
otherwise would not be present.
Remove
the beef and
let drain on paper towels. Any fats that you can remove now will not
float tot he surface of the stew. Place in the cooker and add
the potatoes, mushrooms, carrots, onions, and garlic.
Stir
to combine.
In
a medium bowl mix the 1/3 cup flour with thyme, salt and pepper to
taste and add 1 cup of the beef broth. Whisk this until well
incorporated.
Pour over the mixture in the crock pot and add the other 2 cups of broth.
Pour over the mixture in the crock pot and add the other 2 cups of broth.
Let
cook on low
for
8
hours
or on High
for about
6 hours.
Put
the frozen vegetables into the refrigerator to thaw. With
a ½ hour to go, add them
to the stew.
Recover.
Serve
with a nice hot crusty bread!
