Found
too much month left over at the end of the budget! So dug out some
frozen chicken breasts. Now for a different twist, this is served
with peaches on a bed of creamed spinach. Bright cranberries dot the
platter like touches of red holly.
Chicken,
spinach, peaches and cranberries found in the cupboard and pantry
serve up a new holiday tradition for your table.
Ingredients:
4
pc. boneless- skinless chicken breasts
3
slices bacon
2 tablespoons butter
1 yellow onion, minced
1 clove garlic, minced
8 oz fresh spinach

Salt
and pepper to taste
¼ teaspoon ground nutmeg
½ cup heavy cream
¼ teaspoon ground nutmeg
½ cup heavy cream
1
can peach slices
dried
cranberries
Directions:
Wash
spinach and drain completely. As a personal preference,
I
choose to remove the stems.
In
a large sided fry pan over medium-high heat, fry bacon until crisp
and grease has been released into the pan. Remove bacon to paper
towel.
Add
butter to grease in pan.
Sprinkle
chicken with salt then add it to skillet and cook 8
to 10 minutes, or until
browned on all sides. Remove
chicken to plate.
Add
the minced onion. Cook for about 4
minutes.
Add garlic and cook an additional
minute while
stirring.
Add
the spinach by handfuls stirring each into the skillet. They will
wilt down quickly and allow room for another handful. (This took
about 4 handfuls).
Add
the ½ cup of heavy cream, salt & nutmeg, mix well. Add the 2 tbs
of mayonnaise, stir well.
Mix
in the peach slices & dried cranberries. Place chicken pieces
into the mix and cover.
Allow
to simmer for a good
30 minutes!
Stir occasionally just to make sure nothing burns to bottom.
Serve
with warm bread. What a wonderfully surprising taste! The secret to
cooking spinach is to cook it for at least 20 minutes, this cooks out
the sulfur that makes the greens taste bitter. The addition of
peaches and cranberries livens up the platter.
