Mikls Magical Fruit Salad

This classic salad was first served in 1893 at the Waldorf Astoria Hotel of New York City. Its simplicity made it a big favorite: just chopped apples, celery, grapes, and walnuts in mayonnaise. Some time after “Eagle Brand” sweetened condensed milk was marketed, they offered a recipe for “Magic Mayonnaise”. For Queen Elisabeth's Coronation melon was added to a chicken salad so slave thought it would make a fun salad for you.
 

A fresh take on an classic from the 1950's. An apple, melon salad with celery and nuts and a sweet dressing. What's not to love?


Ingredients:
Mikl's Magic Mayonnaise
1 can sweetened condensed milk Non-fat
½ cup white vinegar
½ cup vegetable oil
2 teaspoon dry mustard
1 teaspoon salt
1 pinch cayenne pepper
2 egg yolks

Salad Ingredients

  • ½ cup chopped pecans
  • ½ cup celery, diced
  • ½ cup of dried cranberries
  • 3 sweet apples, cored and chopped (Like Gala)
  • 1 cup small diced cantaloupe
Mikl's Magic Mayonnaise (Use no more than half of above recipe)
  • 1 Tbsp fresh lemon juice


Directions: 



 

In a bowl, combine all ingredients for the mayonnaise. Whisk until mixture thickens. (cover and refrigerate to blend flavors.)
Store leftovers in a clean sealed jar.



Do your cutting for the salad:

Juice the lemon first and save it.




Do a fine dice of the celery



Chop up the apples sprinkle the juice of 1 lemon over them to avoid the browning.





Chop the cantaloupe in the same size as the apples.



In a large bowl, mix the apples, cantaloupe, celery, pecans, and cranberries. Then add about a half of the recipe for Mikl's Magic mayonnaise. This is best chilled overnight.
