The Harvey Levin

Often true elegance is found in simplicity. This easy but fabulous desert is based on flavors that have pleased for ages. We dedicate it to our LGBT Hero Harvey Levin. Read about him after the recipe.

Basic tastes of peaches, cream, vanilla, spices, even a touch of pumpkin. All may be in your pantry now waiting for an excuse to dazzle. Just step out of the way and let nature shine.

Ingredients:
1 lg can peach halves
1 teaspoon vanilla
15 oz Pumpkin {1 can} – must be plain pumpkin
15oz box spice cake mix
1 cup applesauce
Vanilla ice cream

Directions:

Peaches:
Open can into a covered dish large enough to hold. Stir in the teaspoon of vanilla. Cover and let the flavors blend.

Preheat oven to 350 degrees.

Muffins:
Using a mixer, combine the cake mix with pumpkin and applesauce. Mix on medium speed until blended.
Slave used an ice cream scoop to measure out the mix.

Pour into a greased muffin pan and bake at 350ยบ for about 25 – 30 minutes.
Test with inserting a toothpick. It should come out clean. Let cool in the muffin pan. If you try to remove too quickly, the muffins will fall apart.

Presentation:
Let ice cream set out for about 5 minutes before scooping. If it is so cold you have trouble getting the scoop into it, it is too cold for your taste buds to enjoy. Don't let it melt, but let it soften a bit.

Place a muffin on a small plate with the peach half next to it. Scoop a bit of ice cream into the “bowl” of the peach.
Serve.

If you wish: pour the syrup from the peaches into a small saucepan, add ½ tsp cinnamon and bring to a boil. Stir as this thickens into a topping to drizzle over the desert.

Above all keep out of the way of these great flavors, let them shine.
