Yanks Version of a Fidget Pie

Here is a pork, apple and cheddar creation called Fidget Pie in Shropshire England. Its origins may date back to Anglo-saxon times. As to the name ~~~ who knows? Maybe because of the way the ingredients ‘fidget’ about inside the pie. English meat pies were intended to be carried out into the workplace. Here slave has used individual oven proof bowls to make sharing them easier.

Fidget pie is a traditional farmers pie which was most often made for the harvest workers. Its main characteristic is the marrying of pork, onion, apple, potato, and sometimes cheese

Ingredients:
1 lbs ground pork
2 large cooking apples, peeled cored and diced
1 onion
1 can diced potato
1 cup grated strong cheddar cheese
½ tsp each: salt, pepper, paprika, sage
½ cup of apple cider
1 tablespoon cornstarch
tube of crescent dough
1 beaten egg for a pastry wash.

Preheat oven to 375f

In a small bowl mix: salt, pepper, paprika, and sage. Set aside.
Chop the onion, peel, core, and slice the apple
Spray the baking bowls lightly.

Drain the potatoes and microwave for about 3 minutes until soft but not broken down.

Sauté the pork and onion until meat is cooked and onion is turning brown.
Distribute the apple slices in bottom of each bowl.
Sprinkle each layer with the seasoning mixture.

Next a layer of pork and onions
seasonings
potatoes
seasonings and top with the cheddar

Mix the cornstarch into the cider until smooth and pour over contents of bowls.

Spread out wax paper on the counter and unroll the crescent dough. Invert an extra bowl on top to cut into “tops” and place on each bowl.

Brush with the beaten egg and bake for about 45 minutes or until the crusts are golden and puffed up. Let cool for about 5 minutes before serving.

A perfect harvest bowl to set for my Master Indy.
