Yes
here is a chicken version of the English classic beef dish. Tailored
to what you can easily find at the local supermarket. This fancy dish
can really polish your reputation as a chief! Yes and it is not that
hard to make.
Chicken
in a golden pastry with the tastes of Cordon Bleu! A new classic to
claim as your own.
Ingredients:
2
tablespoons butter + 2 of oil
2
boneless, skinless chicken breasts
salt
and ground black pepper to taste
2
sliced thick bologna pieces
½
cup grated Gruyere cheese
1
tube crescent roll dough
2oz
cream cheese softened
2
Tbs honey mustard
egg,
slightly beaten
Directions:
Heat
olive oil and butter in a large skillet over medium heat. Season
chicken breasts with salt and black pepper. Cook chicken in the hot
oil until golden and almost cooked through, about 4
minutes per side.
Transfer to a plate.
While
that browns, cut up the bologna into small pieces:
Grate
the cheese into that:
In
a small bowl mix the mustard into the soften cream cheese.
Preheat
oven to 375
degrees F.
Line a baking sheet with parchment paper.
Lay
out wax paper on the counter and unroll the crescent dough onto that.
With a pastry brush, “paint” with the cream cheese/mustard
mixture.
Cut
a nice size piece of breast and slice down the middle. Place on
piece on the dough. Spoon 2 Tbs of grated cheese/bologna mixture on
that and top with the other piece of breast, making a sandwich.
Cover
the dough around this and tuck together to seal. Place seam side down
on the parchment paper.
Whisk
the egg into a “wash” to brush on the dough, top and all sides.
Here
we scattered some asparagus around to roast along side.
Bake
for 30
to 35 minutes or
until nicely golden.
Remove
from oven and serve.
