Here
is a quick trick to use up left-over rice. Turn it into a desert.
Easy to make.
For
a different touch try using dried cranberries in the place of
raisins!
Ingredients:
- 1½ cups cooked rice
- ¼ cup raisins
- 3 eggs
- 1½ cups milk
- ½ cup sugar
- ½ teaspoon Apple Pie spice
Directions
- Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, and sugar: pour over rice. Mix well. Sprinkle top with apple pie spice.
- Bake,
uncovered 45-50
minutes
or until a knife inserted in the center comes out clean. Cool.
- Refrigerate
leftovers. Yield: 4-6 servings.
