Jacked Chicken for Will Clark


This dish was designed to honor a modern day LGBT hero, Will Clark. This chicken features a Jack Daniels flavored mustard based BBQ sauce and is baked in the oven and finished under the broiler.


This also works with pork chops or ribs. Just adjust timing accordingly.


Ingredients
  • 8 bone-in chicken thighs with skin
  • 2 cups buttermilk
  • ¼ cup Jack Daniels

Sauce:
  • 1 tablespoon butter
  • 4 -5 cloves garlic – chopped fine
  • 1 small red onion – diced
  • ¼ cup Jack Daniel’s Whiskey
  • ½ cup brown sugar + ¼ cup white sugar
    1 Tbs horseradish
    ½ cup maple syrup
  • ½ tsp. salt
  • 1 tsp white pepper
  • 1 orange
Instructions Night before
BBQ Sauce:
    In a sauce pan heat the butter and onions over medium low heat. (about 15 minutes). Add the garlic for another 1minute.

    Zest the orange then slice and reserve slices


    Add Zest to onions then the remaining ingredients.


Simmer lightly on a low heat for about 20 minutes
Remove from the heat and let cool down.


    Cover and refrigerate.
For Chicken Thighs:
Rinse and pat dry place in a 9 x 13 dish and coat with buttermilk and add the Jack Daniels.
Cover and let marinade overnight.

Day Of:



Preheat Oven 350 degrees. Set out the chicken, rinse and pat dry and allow to come to room temperature while oven heats. Line a baking sheet with foil and place a cooking rack on this. Spray with cooking spray.


When temp is reached on oven, spray the underside of the thighs and place skin side up on the rack.
Spoon BBQ sauce on each.


Bake 45-50 minutes. When time is close, check with an instant read thermometer. It should read 160! Switch the oven over to broiler. Spoon more sauce over each and broil for about 4 to 6 minutes. Watch closely as it will burn easily.
Serve with white rice and reserved orange slices. A simple green vegetable goes well with these. What a great meal to serve to the Master!

Will Clark


Will Clark is a modern LGBT hero! Best known as a gay erotic worker and film actor. He is recognized in the Grabby Awards Hall of Fame. Clark has received a special citation from the GayVN Awards for his fundraising work in support of HIV/AIDS charities.
Prior to his pornographic film career, Clark was a struggling actor in New York City who just couldn't find roles. No one was casting a young, redheaded male. So to earn money, he go-go danced at several clubs and started doing male escort work.

Adult film career

It was even difficult to find work in erotic films. "'You’re too white, you’re too hairy, and you’re a redhead” he was told. Clark's first erotic feature, Dr. Goodglove was in 1995. Within a year, however, Clark had added a significant amount of muscle and begun to appear in leather and BDSM pornographic films. Clark subsequently appeared in 48 pornographic films in a variety of genres, although reviewers say leather and BDSM roles were his best performances.
Clark's pornographic film career ended around 2006.
Clark has managed his image and public persona to maintain his popularity. "I’ve been good at marketing on the Web. I take care of my fans when I tour—give them pictures and promotional materials," he told one interviewer. "The columns I write and the fund-raisers I do help raise awareness of my presence. Everything sort of blends together."
HIV/AIDS activism


Will Clark wrote me to clarify: 
"My Stop AIDS Chicago activism was actually pre-porn - from 1991- 1993. I facilitated groups of gay men and 'men who have sex with men' on safer sex attitudes and practices. :)"

"I did my first emcee gig as a benefit for Aid for Aids at the Gauntlet Fathers Day 1997. Some would say that I have not shut up since (<G>)"

A series of fundraisers began 1998. His first the Bad Boys Pool Party earned $8,300, and the second earned $10,600." Clark produced fundraisers featuring variations on this and similar themes in Los Angeles, Palm Springs, and San Francisco.
Clark is a published author - being a regular contributor to Dude magazine, International Leatherman, and Pulp.
Two children's plays of his have been produced on the southern California stage. Clark has written and performed in an autobiographic theatrical solo show entitled Altered Ego; the show was performed several times between 2002 and 2004. One reviewer noted, "Clark immediately establishes a rapport with his audience. Here is a wonderful performer who feels comfortable and natural with his remarks."
Clark has just finished a run of his famous “Porno-Bingo” nights at Uncle Charlies. Throughout its run, The Will Clark Show feat. Porno Bingo raised over a quarter of a million for over 80 New York based LGBT non-profits.
