Yo Sweet Mama's Meatloaf

The original recipe for this was called Beef & Peach Pie. After playing with it several times slave tried it out to much success. However the title had to go. For this I pictured a sassy, full figured mama who knows her way around and wont take any grief from NOBODY!



This features a great blend of the well known meatloaf and topped it off with a sweet fruit flavored sauce with tang to wake up your man's eyes.



Ingredients:
  • 1 lbs. ground beef
  • ½ c. oats
  • 1 egg
  • ½ cup milk
  • ½ cup chopped onion
  • 1 teaspoon salt
  • 1 pinch pepper
  • 1 (15 ounce) can sliced peaches, drained
  • ½ cup favorite BBQ sauce
  • 3 Tbs shrimp cocktail sauce
  • ¼ cup brown sugar
  • Hot sauce optional

Directions:
Preheat the oven to 350 degrees F 
 


Cut an onion in half. Then cut that in half and chop the ¼, grate the other ¼ saving the juice that comes out.
Drain the peaches well.
In a medium bowl, mix together the ground beef, egg, milk, onion, oats, salt and pepper, and milk. Let that sit for 10 minutes until the milk is absorbed into the oats.


Line a 9 x 13 baking dish with foil and form a long loaf of meat down the center.

Use your artistic flair and make ridges on each side to hold the topping.
Leave room on each side of the loaf for the grease to drain out as it cooks.


Bake for 30 minutes in the preheated oven.
While that cooks, mix up the BBQ sauce into a medium sauce pan over medium heat. Stirring well so that it is well incorporated.


When half an hour is up, remove pan from the oven. Arrange the sliced peaches over the beef. Spoon your BBQ sauce over the top of the peaches.

Bake for an additional 20 minutes.
Let stand for at least 10 minutes before serving. 
 


This was served with plain homemade mashed potatoes and a simple microwaved bowl of peas with no sauce.
Any left over BBQ sauce can be spooned on at the table by your guests.
