Mr Kristofer Chicken Casserole

Here is a quick simple casserole that will satisfy the hungriest of Masters! Basic comfort food. For fun we are spotlighting a BDSM role model tonight:
Mr. Kristofer Weston. Read more about this interesting man after the recipe. 
 

Caned chicken, noodles, frozen vegetables and soup! Raid the pantry time for this great meal. 
 

Ingredients:
½ box bow tie pasta
2 cans cooked chicken
1 pkg frozen mixed vegetables
1 cup milk
1 22.6oz can cream of chicken soup
½ chopped onion
½ cup mushrooms
4 oz low fat cream cheese
½ pkg ranch dressing mix


Directions:
Put the water on and cook the noodles. Use the shortest time listed on package.
Preheat the oven to 350 degrees. Spray a baking dish with cooking spray.



While the pasta cooks Do your cutting:
Rinse the mushrooms and cut them into large chunks. Chop the onion. Cut the cream cheese into 1 inch chunks.
Drain the chicken



In a large bowl add the mushrooms, onions, and frozen vegetables. Mix well. 
 


In a bowl mix the soup with the milk, cream cheese hunks and half packet of ranch dressing mix. Stir carefully.

 
Add the cooked pasta to the large bowl. Pour the soup mixture on top and stir in. Last step is to gently add in the chicken. Try to keep the larger chunks together.



Dump this into the sprayed casserole. Cover with a lid or foil.



Roast at 350 degrees for about 40 minutes.


Let the casserole rest for 5 minutes before serving it.
The vegetables will be cooked and all of their great taste will be infused into the casserole.


You could serve with a crusty bread, however basically this is a one dish meal with protein, dairy, vegetables, starch, and a cheese.

All in a hot package, rather like Mr Kristofer himself!

Creamy French Scrambled Eggs

Got the most wonderful surprise this last week! After several decades of considering myself an expert on all the ways of cooking eggs, I learned a “new” one! Scrambled is considered the quickest way to fix eggs. But leave it to the French to do it better. It is such a simple technique, I hesitate to make a post on it. However the taste is fantastic! Try it sometime as a special treat.


Turn simple scrambled eggs into a fancy unique presentation by simply adding love! Garnish with sliced tomatoes, serve with bacon, just about anything goes with these nearly spoonable eggs. 
 

Ingredients:
4 large eggs
1 Tbs non fat Half & Half
Salt and pepper to taste
optional 1 tsp mayonnaise

Directions:
In a small bowl, combine eggs, half & half, salt and mayo if using. Stir with a fork until all mixed together. You don't have to whip these with a whisk or incorporate air, just blend.



In a small sized non-stick skillet, lightly coat with less than a tsp of oil and let warm over medium low heat. This is important. Usually scrambled eggs are cooked quickly over a high heat.


You don't want a hot pan! When you add the eggs you don't want to hear them “talk” - make any noise. If you hear them sizzle, the pan is too hot!
Notice the halfway mark on the stove knob – then pick halfway from that to off. Use this setting.


Now, using a soft flexible spatula start gently stirring. Many spatulas are marked heatproof with a red handle. Here I use a silicone “French spatula”.

THIS will take time. Maybe a full 8 – 10 minutes. Don't stir fast, just keep the mixture moving. Normally the proteins coagulate rapidly in a hot skillet. Here you want to do it slowly. Let the proteins come together in a gentle loving approach. This is simply adding love, time and effort into your cooking. Focus on who it is you are cooking for. Think about how surprised they will be. How their toes will curl at the creamy taste. Here when they use the term “French creamy eggs”, they are referring to the texture not to adding a cream sauce.

The eggs will be fully cooked, only not in a solid blob. Remember the eggs will continue to cook on the plate.

The eggs should be a soft spoonable delight. Serve with toast points and maybe a couple of sliced tomatoes. Sprinkle with pepper to taste.
Truly heavenly.

For flair, add caviar or roasted maitake mushrooms, or how about a Louisiana-style hot sauce on top! But for breakfast – who are we kidding? Just make this recipe first. You can play with it another day.

Geng Le Dragon Eggs


While working on this recipe, I realized that I have been sadly neglecting LGBT info from the far east. It is important and very rich with characters. So this dish is dedicated to one such LGBT leader Geng Le. Please read a quick story about him after the recipe.



While the original recipe calls for ground pork, shrimp and crab, here we use a more forgiving supermarket list of pork sausage and crabmeat. A great tasting mound of meatballs in a dragon sauce served on ramen noodles, enjoy!


Ingredients
Dragon Sauce:
¾ cup white vinegar
½ cup soy sauce
½ cup granulated sugar
1 teaspoon Worcestershire sauce
½ cup vegetable oil
½ cup chopped garlic
Meatballs:
  • 1 lbs pork sausage
  • 2 tablespoons soy sauce
  • 2 tablespoons granulated sugar
  • ½ tsp pepper
  • ¼ tsp crushed red pepper flakes
  • 4 cloves garlic, minced
  • 1 large egg
  • ½ cup panko bread crumbs
  • 8 ounces crabmeat
  • ½ cup green onions, finely diced

Directions

For the dragon eggs:
Pre heat oven to 350 degrees. Line a baking tray with parchment paper.
Mince the garlic and set aside. Slice the green onions for a garnish and set aside.


Open the sausages and place the loose pork in a large mixing bowl.

Add the minced garlic and green onions. Next pour in the breadcrumbs.

Add the egg.

In a small bowl mix the soy sauce, sugar, black pepper, red pepper flakes and ¼ cup water. Pour over and gently mix in.

Drain the crabmeat and work this in last. Set aside for 15 minutes.
This allows the bread crumbs to expand.



  

Lay out wax paper and make balls of meat mixture.

 
 Place on a parchment lined tray and bake for 18-22 minutes, or just until the center of each meatball is cooked.

While that is cooking:
 


For the dragon sauce: In a medium bowl: add the vinegar, soy sauce, sugar, red pepper flakes and Worcestershire and bring to a boil; set aside.


Cook ramen noodles according to package directions, but do not use the seasoning packet. Drain well.

Microwave some sugar snap peas to for a nice green side dish.

Transfer meatballs to a covered dish to keep warm.
Cover with dragon sauce and serve with bed of cooked ramen noodles.
Slice green onions for a garnish.

Geng Le is an LGBT hero and leader you may never have heard of. A former policeman with an activist bent, his movie star looks are conservative and conventional.

Homosexuality was still illegal in China while he was on the force. Now, he's arguably one of the most important figures in the country's LGBT community.


During the 16 years Geng spent on the force he felt moments of deep depression. ‘I feared the times when I was asked questions like: “When will you get a girlfriend, when will you get married?”’ remembers Geng. ‘I felt like it was too hard to live this life with such a secret.’

“I once thought I was the only gay in the world,” he said. Textbooks and Chinese Internet sites told him that being gay is an illness. Some even recommended electroshock or aversion therapies. It wasn’t until he started to look through foreign websites that he realized he wasn’t alone in the world.

“That’s when I had the idea to create a website, to tell people what homosexuality is,” he said. His website danlan.org soon became a popular way for gay people to connect in China, and an emotional outlet for Geng Le. “It was the only place where I could be true to myself,” he said. 



By 2007, danlan.org had become China’s largest gay website. When his supervisors at the police bureau found out about the other work, Geng was forced to resign. His family was devastated. His friends and colleagues turned their backs.
Unsurprisingly, it was repeatedly shut down by authorities who claimed that it violated traditional moral principles.

Attempts to commercialize it proved as problematic as censorship. Brands who might have bought ads feared that associating with homosexuals would taint their image, so they boycotted the site.

However Geng’s mother, at least, is accepting of his boyfriend, who lives with him.

In 2012, his life took a different path. He met with China’s Premier Li Keqiang to discuss his work in HIV prevention. Their handshake was broadcast on Xinwen Lianbo, or News Simulcast, China’s prime time news program produced by the state-owned China Central Television (CCTV).
In the same year, he launched Blued. 




 
Blued, Geng’s new gay dating app, now has 15 million users, including around 12 million in China (Grindr has a total of five million users). Geng has used the brand to set up HIV testing stations for gay men, strengthening his relationship with the government, which has struggled to connect with much of the gay community and has recently placed an increased focus on treating and preventing the spread of the disease.
Blued, similar to popular foreign apps such as Grindr and Jack’d. Crucially, however, Blued allows users to connect their profiles to their Weixin and Weibo accounts. Roughly 70 per cent of its users are active on it at least once a month and a quarter log on everyday.

The state-run Xinhua news agency has stated that health authorities are concerned that the ‘broad use of the internet by gay and bisexual men in China… may exacerbate the country’s already high prevalence of HIV’. Geng – who uses his websites to promote safe sex – believes it is the opposite. Previously, gay men in China had little choice other than to search each other out in public toilets or parks. But this activity has decreased since online dating opened other avenues to meet new people.


Geng, now 40, has long dreamed of having his own child.
“Ever since I turned 35, I’ve wanted to become a father, just an original desire,” Geng said.
One year ago he finally had his son through surrogacy in California, where the practice is legal. Xiao Shu’s mother is an anonymous Caucasian egg donor.

“I want an exciting life, to prove that even if you are gay, you can be successful, you can be rich, you can have respect and approval, you can have social status,” he said, speaking in his sprawling office building in Beijing, where he oversees about 200 employees. "You can have dreams, and a happy life.” 
 
“I am apologetic that I can’t give Xiao Shu a perfect family,” he said. “But I will teach him to be strong, just like I have been. I will tell him, your father is gay, but he wanted to give you life. I have confidence, and responsibility, to give you a happy life. I hope you won’t blame me for having you. Maybe you will say, thank you, dad, for bringing me into this world.”

Cooker Sausage & Potatoes

Tonight's slow cooker meal is dedicated to a rather forgotten soul named John de Wettre of Belgium. He was burned at the stake in 1292. Catch up on his story after the recipe. 
 


A mixture of sausages and potatoes makes an interesting topping on some otherwise healthy green pasta.

Ingredients

  • 1 can diced potatoes
  • 1 lbs smokie links
  • 8 ounces low fat cream cheese (softened)
  • 1 large can potato soup
  • ½ cup half & Half
  • 1 ounce dry ranch dressing mix

Directions

Wipe out your slow cooker and spray.
Let cream cheese come to room temperature.
Open and drain the can of diced potatoes, open the soup can and the packages of sausages. 
 



In a measuring cup mix half the package to Ranch Mix into the half cup of half & half.

Dump the potatoes, soup, cream cheese and sausages into the cooker and stir around. Pour the ranch creamer mixture over and stir again.


Close the lid and let cook on LOW for 5 – 6 hours.

As the time approaches, cook the pasta according to package directions.

Serve on a bed of pasta.

NOTE:
You might try meatballs in this sauce as well.
Colby jack sprinkled on top is nice.
You can get extra fancy by adding frozen corn, chopped carrot slices, 1/2 onion and minced garlic to the cooker.

John de Wettre of Belgium Burned at the Stake
for Sodomy

In 1229 in the Belgium city of Ghent, a 29 year old knife maker John de Wettre was discovered having sex with another man. Lost in the mist of history are the details of the “crime”. What were they doing? Who was the other man? Was this a first time offense, etc etc. All we really know is that
he was found guilty and executed by being burned alive at a stake. This is the earliest known execution for that act. If it was the first, it would not be the last!

For about 800 years, Western Culture has shown extreme homophobia. Gay people were the scapegoats, the evil “others” that were to blame for all problems. An “abomination the world despises”.

It is interesting to guess why this change by the Roman Catholic Church started in the 1200's. There was a shift underway from treating homosexuality as an acceptable standard, to a vice fit for penance, to an evil that must be killed.

In many parts of Europe towards the end of the thirteenth century, sodomites, heretics and other social and sexual deviants were centered on for hatred. Once only sinners were now criminals that were punished by loss of rights, property, and life.

This proved to be a potent political weapon. Homosexuality was prominently charged in efforts to destroy the Knights Templar in 1307.

And thus a rein of terror spread for over 700 years. Really not that long a time in the history of mankind. But more than enough to destroy an untold number of souls. It's effects are still with us today. So this is why I remember a poor knife maker named John de Wettre. This man found guilty of expressing some kind of sexual closeness with another man. For this he was tied to a big wooden pole, tinder and logs thrown at his feet and set afire to die in a most agonizing way. This is de Wettre's forgotten legacy to us.
