Pride Dinner 2018

Saturday June 16th is the 4th annual Pride Celebration in my suburb-city of Saint Charles. I was honored to help them with the first one a few years ago and it has a special place in my heart. Our Pride Meal is a Crispy Corned Beef. Served with roasted Brussels Sprouts and some carrots & onion.


This slow cooker meal will produce a nice piece of meat with a tasty crust! What a wonderful way to celebrate our Pride!


Ingredients

  • 2-3 lbs corned beef, with packet
  • 1 cup chicken broth, less depending on size of slow cooker
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 2 Tbs brown sugar
  • 2 Tbs cider vinegar
  • ½ tsp black pepper

Instructions

Wipe out the cooker and spray with cooking spray. ALWAYS do this.
Open beef, save packet, drain liquid, rinse and pat dry. Add corned beef, fat side up, to the slow cooker.


In small bowl, mix the minced garlic, spice packet, sugar & pepper. Rub this into the top of the meat.


Add the vinegar and bay leaf on the side of the corned beef and add just enough broth to come up to only about 25% of the way to the top of the meat.



Cook on low for 8 hours.
Place under a broiler (6-7 inches away) for 1-2 minutes.

If you check about half way through and find it submerged in liquid, ladle it out to return to right amount. Sometimes the meat packer has pumped the meat with a water solution before packaging.

The Sides:

Ingredients:

1 lbs fresh Brussels sprouts
1 orange
¼ cup maple syrup
Kosher salt
olive oil


Directions:
Pre heat the oven to 400 degrees

 


Rinse the fresh vegetables in a vinegar bath. (About ½ cup white vinegar to a large bowl of luke warm water). Let them soak for about 5 minutes. 
 
Line two baking pans with foil and pour a couple of tablespoons of olive oil in the bottom of each.

 



Rinse off the sprouts, remove any spotted outer leaves and cut as much of the stem off as possible. Then cut each length-wise. Place the cut side down in one of the pans.
When all are cut, sprinkle with kosher salt.


Now with a “zester”, zest about 2 tablespoons of just the bright orange skin over the top of the sprouts. Avoid any of the white part. If you just used the juice of the orange, it might turn bitter, however the skin has the orange oil which is sweet. You will be able to smell the aroma as you work.
Now carefully drizzle a bit of olive oil over the top. 



Do the same with the maple syrup. Cover the end of the bottle with your finger so that only a small amount comes out at a time. Be sure to wipe off the bottle with a damp paper towel so you will be able to open it the next time.

Place in the 400 degree oven to roast for about 30 minutes. Or until you start to see bits of brown on the outsides. The sprouts will be crispy on the outside and golden and caramelized on the cut sides. 
 

Many cooks forget that this vegetable creates a natural gas that can cause bitterness and thus earn its bad taste reputation. When they are cut and roasted with a touch of something sweet, this gas dissipates leaving a wonderful aroma and taste that will draw the family to the table.

Garlic Roasted Carrots and Onions

Ingredients

  • 1 lbs. carrots
  • 1 red onion cut into 8 wedges
  • 3 garlic cloves minced
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tsp salt + pepper to taste

Instructions

Oven has preheated to 400



Peel the carrots and cut into 2 inch lengths
Cut the onion into wedges.

In a large bowl, whisk together the olive oil, vinegar, lemon juice, salt, pepper, and garlic.

Add carrots and onions and toss to combine.

Place carrots and onions into the second baking dish.
Roast in the oven, uncovered, for 30-40 minutes; until carrots are tender.
Both vegetables should be ready at the same time.


Switch the oven to broiler.

Carefully remove the brisket from the slow cooker to a foil lined pan with a rack.

Slide under the broiler for 3 – 4 minutes to make a nice crust on the meat.

Cut into big slices against the grain.

If you like: make a simple glaze:

½ cup honey
¼ cup brown sugar, packed
3 tablespoons stone ground mustard
½ teaspoon ground ginger
Mix together in a small sauce pan and heat until well blended. Serve on the side.

Golden Chicken Stroganoff

Stroganoff is a dish served around the world from the US to Japan. Each country or region has a slightly different recipe and presentation. Larousse Gastronomique lists Stroganoff as a cream, paprika, veal stock and wine recipe. Brazilians prepare Stronganoff with chicken. In Sweden, they use sausage. Japanese home recipes call for the dish to be served on rice.


Here is a solid Midwestern meal from the 1950's. Upgraded to modern tastes and sensitivities. Hope you enjoy this one pan meal.



Ingredients:
2 lbs chicken boneless skinless (either breast or thigh)
½ lbs fresh green beans
½ lbs cremini mushrooms
1 small onion chopped
3 cloves garlic, chopped
4 oz low fat cream cheese
5 oz container Non fat Greek style yogurt (plain)
1 can golden mushroom soup
½ soup can of chicken broth
½ tsp mustard powder + ½ tsp onion powder + ½ tsp paprika
½ box wide noodles.

Directions:
Cook the noodles according to package directions, rinse and drain.
Rinse and chop mushrooms, let drain


rinse and snap green beans
chop the onion & garlic
let cream cheese come to room temperature
Cut the chicken into bite sized pieces (about 1 inch)


In a large skillet, heat 2 Tbs oil and the minced garlic. Saute for 1 minute before adding chicken to the pan. 
 

Stir and cook until browned on all sides but not done. Using a slotted spoon, empty the skillet into a large bowl.


Add 1 Tbs butter to skillet. Now the mushrooms and onions get sauteed for about 5 – 6 minutes.
 

Stir in the green beans and cook for another 5 minutes.
With slotted spoon, remove this mixture to the bowl with the chicken.


In a bowl mix the can of soup with ½ can of chicken broth.


Mix in the pieces of cream cheese with mustard powder, onion powder and paprika until well blended.


Pour this into the skillet until well blended and heated.
Pour into the large bowl with chicken and vegetables.

Just before serving, stir in the yogurt. 
 
Serve over the noodles for a wonderful meal.

The Sisters' Pork & Spuds Casserole

Here we combine the great taste of pork with some potatoes and onions, a bit of mustard and sour cream. A new and different take on a couple of old favorites. This meal is dedicated to the outlandish group of “Do Good'ers”: The Sisters of Perpetual Indulgence. Find out more after the recipe!


One pan in the oven and a microwaved green vegetable presents a full restaurant style meal. Dust with a bit of cayenne is you want to be fierce! Flavors you know baked together for your table.


Ingredients

  • 1 can cream of chicken soup
  • 1 carton sour cream
  • 1 soup can full of chicken broth
  • 2 Tbs low salt soy sauce
  • 2 pork steaks
  • parsley flakes (optional)
  • salt and pepper to taste
  • ¼ cup stone ground mustard
  • fresh mushrooms
  • 3 potatoes, peeled and sliced
  • 2 onions
Directions:
Preheat oven to 350. Spray a 9 x 13 casserole with cooking spray and set aside.

Clean and quarter the mushrooms, drain 
 


Scrub and peel 4 – 5 potatoes. Slice on a mandolin slicer to about ¼ inch thick.





Grate the onions.
Arrange potatoes in bottom of casserole, alternating with spoonfuls of onion.



Combine soup, sour cream and broth in a bowl, mixing well.



Cut pork steaks into 3-4 inch pieces, removing the bone.
Heat skillet with oil and brown both sides of the pork. They will finish cooking in the oven.
Brush each piece with mustard and place on top of potato/onion layer.



Sprinkle mushrooms over top and pour in the sour cream/soup mixture.
Dust with a bit of Cayenne pepper just to be fierce!

Cover with foil and bake at 350 for an hour.

 Remove foil and continue baking 25 to 30 minutes or until pork reaches 145 degrees.
Serve with a plain green vegetable.

The Sisters of Perpetual Indulgence 
 

In the late 1970 the urban gay districts – like the Castro – were seas of clones. Muscular gay men, wearing boots, tight jeans (501's with the bottom button un-done thank you) and t-shirts! Tom of Finland drew them and Peter Berlin embodied the look. Then on Easter of 1979 three guys, dressed in full nun's habits roller skated out into the crowds to protest the same-ness. They were also highlighting the over 900 years of oppression from the Catholic church. By extension they protested the growing power of the “Moral Majority”. Believe me, they got attention!
Sister Vicious PHB, Sister Missionary Position, and Baruch Golden, were quickly joined by others and the new group known as The Sisters of Perpetual Indulgence grew!

Like all social and political groups, it could not live on negatives. The group quickly became fund raisers extraordinaire!

The Sisters have devoted ourselves to community service, ministry and outreach to those on the edges, and to promoting human rights, respect for diversity and spiritual enlightenment. They believe that all people have a right to express their unique joy and beauty. The “sisters” use humor and irreverent wit to expose the forces of bigotry, complacency and guilt that chain the human spirit.

In 1982, a team of Sisters and medical professionals created “Play Fair!”, the first safer sex pamphlet to use plain language, practical advice and humor, and considered by one of the founders to be “one of the Order’s greatest achievement in community education and support”.

The Sisters helped organize the first AIDS Candlelight Vigil. It is reported the group has raised more than $1 million in San Francisco alone to benefit such groups as the Breast Cancer Network, Haight-Ashbury Free Clinic and the Gay Games. The Sisters continue to bring meals to those who can no longer care for themselves, and they fund alternative proms for LGBT youth.
The Sisters have grown throughout the U.S. and are currently organized as an international network of orders. These are mostly non-profit charity organizations that raise money for AIDS, LGBT-related causes, and mainstream community service organizations. They continue promoting safer sex and educating others about the harmful effects of drug use and other risky behaviors. 
 

Their appearance has changed over the years; the nun motif remains the same, but it has been joined with exaggerated make-up that accentuates the rebellion against gender roles and religion. They don't hide facial hair but rather flaunt it in the “genderfuck” tradition.

The Sisters have attracted controversy both within and outside the LGBT communities, but have received the harshest criticism for obvious parodies of Catholic icons and policies. However let me remind even the most devout christian LGBT's that our God is love and has the greatest sense of humor!

As the “Sister's” say: “ Go forth and sin some more!”

Ben Cohen French Onion Chicken

As we enter the month of Pride, slave noticed how remiss these posts were of honoring our allies. Let us never forget to support those who support us! This dish we are naming in honor of a true hero of LGBT allies, Ben Cohen. Learn more about him and his “Stand-up Foundation” after the recipe.


Here we take the wonderful taste of french onion soup and apply it to chicken. An easy, stove top one pot meal you can sere alone or with a green vegetable. Enjoy.


Ingredients

¼ cup butter
4 medium sweet onions, thinly sliced (about 2 cups)
1 tsp salt + ½ tsp pepper
1TBS brown sugar
1 teaspoon chopped fresh thyme leaves
boneless skinless chicken thighs, cut into 1-inch pieces (1¼ lb)
3 tablespoons cornstarch
1 cup chicken broth
12 slices baguette, 1/2 inch thick (from 14-oz loaf)
3 slices Havarti cheese 
 

Directions:
Peel the onions and slice them carefully with a mandolin slicer. Mix the onions with salt, pepper, brown sugar and thyme.


Cut the thighs into bite sized pieces and set aside.



In dutch oven, melt butter over medium heat. Add the onions and cook 12 to 15 minutes, stirring often, until onions are soft and golden brown. 
 


Spoon in chicken. Cover; cook on medium setting 7 – 10 minutes or until chicken is no longer pink in center. 


In a bowl, stir cornstarch and chicken broth until well blended. Stir into chicken mixture. Raise heat and cook on High 5 to 8 minutes or until thickened.


Meanwhile, set oven control to broil. Line cookie sheet with foil. 
 

Arrange baguette slices in single layer on cookie sheet. Top each with a piece of cheese. Broil 3 inches from heat 2 to 3 minutes or until cheese is melted and edges are golden brown. Serve with chicken mixture. Sprinkle with additional fresh thyme, if desired.
This can be served over mashed potatoes, rice or even pasta.
Or with a side of a green vegetable.

Ben Cohen, MBE (born 14 September 1978) is an England Rugby Legend. He is a World Cup champion, and second all-time try scorer for his country.
Cohen is the 10th-highest point scorer in England rugby history and third in the list of all time England try scorers.

In May 2011, Ben retired at the top of his game to found the Ben Cohen StandUp Foundation. Cohen founded The Foundation to combat bullying, and he has specifically noted homophobia as one of the bullying problems on the StandUp agenda.


In November 2000, Cohen's father Peter Cohen, was fatally injured while protecting an attack victim at the Eternity nightclub in Northampton which Peter Cohen managed. He died a month later from head injuries sustained in the assault. Three men were found guilty of violent conduct.

Cohen is clinically deaf, with about 30 to 33 percent hearing loss in each ear, and has been involved in efforts to make rugby more accessible to the hard of hearing, especially young deaf players.

Ben has appeared on the cover of Compete Magazine and the cover of Out (magazine).
In 2013, Ben Cohen was named as one of the initial inductees to the National Gay and Lesbian Sports Hall of Fame established in Chicago, Illinois.



Being straight and fighting homophobia has often brought attacks from both the straight community as well as the gay. Still, (and quite happily) heterosexual, Ben continues to stand up for our rights and has proven himself to be a true friend and ally.

He travels worldwide speaking to businesses about the importance of character, respect and equality in creating a kinder world. Ben has reached millions of people with his anti-bullying message through global media coverage: He has over 500,000 followers on social media. In the UK, he has worked with the Home Office, where he led the charge for a StandUp Charter to end homophobia across sports particularly in soccer, rugby and tennis.


The foundations website states:
“We stand up against bullying regardless of to whom it happens. We support organizations and projects that help stop bullying, help those hurt by bullying and/or help increase equality and diversity. We do this because up to 50% of children and young people and many adults in the UK say they have experienced bullying. People who are lesbian, gay, bisexual or transgender are even more likely to be bullied. People who are bullied feel disconnected, leading to a sense of isolation and loneliness. They are often wary of others and lack quality friendships. They can suffer from low self-esteem, poor achievement, an increased risk of depression or anxiety and, in extreme cases, a higher risk of suicide.
When asked how he wanted to be remembered, Ben Cohen said: “As a loving father, a kind friend, and as someone who had fun”.
