Deviled Egg Macaroni Salad

A last minute party was decided on for the Fourth. Bring in hamburgers & chips didn't quite make it in slave's eyes so this salad was created. Don't know why I haven't tried it before. Mixing the great tastes of a macaroni salad with deviled eggs!

Eggs, pasta, mayo and mustard. Throw in some cheese and you have a party!

Ingredients
  • 12 large eggs hard boiled
  • 12 oz elbow macaroni uncooked
  • ¼ tsp salt + ¼ tsp pepper
  • 2 Tbs. mustard
  • 1 cup mayonnaise
  • ¼ cup pickle relish
  • ½ medium red onion chopped
  • ½ tsp smoked paprika
  • ½ cup shredded cheddar cheese
Instructions
Chop the onion.
Cook the large elbow pasta according to directions, drain and cool. Hard cook the eggs.

Allow each to cool!



In a bowl combine the mayonnaise, mustard, pickle relish, and paprika.


Peel the eggs and cut them in half to remove the egg yolks. Transfer all the egg yolks to a bowl, and chop up the egg whites into large pieces.


Mix the egg white with the pasta and the red onion. Cover and refrigerate.

Mash the egg yolks into the mayo-mustard dressing until well mixed. Cover and refrigerate.



An hour before serving: stir the cheese into the pasta mixture.

Mix the sauce in well. You might sprinkle top with more paprika or Cayenne pepper if you wish before serving. Will last in refrigerator for a week.

This will go nicely with our impromptu 4th of July party. Ordering in 40 cheese White Castles! A few bag of chips, ice cream sundaes and soda and suddenly fun for all!
