Tchaikovsky Two Chicken

The idea for this mixture came to slave while searching old recipes. Blending a sweet cranberry with a  sharp red onion stuffing really makes this dish.

Tying the chicken is the hardest skill you need and if you can tie a shoe lace you've got this covered.

 

 

 

Ingredients:


2lbs boneless, skinless chicken breasts
½ cup chopped red onion
½ cup dried cranberries
4 oz low fat cream cheese softened
2 TBS oil
1 pouch (4.7 oz) instant mashed potatoes
½ tsp garlic powder
½ teaspoon paprika
1 egg
½ cup mayonnaise
Butter flavored cooking spray


Directions:



Do your cutting: Chop the red onion.



Heat oil in skillet over medium heat. Stir in the red onion and saute for 4 minutes. 


Add the cranberries stirring occasionally to keep fom sticking. Let them cook together for another 4 minutes. Drain into paper towels in a small bowl.



In a larger bowl cut up the cream cheese and blend in the onion-cranberry mixture while still warm. Mix thoroughly.


  Spread out some wax paper on the counter. Spoon out the cheese mixture in a line. Form into a log with your hands. Since I using 3 breasts I want 3 logs almost the same length as each breast. Once that is done, wrap each in plastic wrap and freeze over night.


Place a rack in the center of the oven and preheat to 400 degrees. Line a rimmed baking sheet with foil and place a cooking rack on it. Spray lightly.

With a knife carefully cut down the side of each breast forming a “valley” the length of each piece. Un-wrap each cheese log and insert into this and fold over the breast. Tie with kitchen twine.


In a shallow bowl open the envelope of instant mashed potatoes. Stir in the paprika and garlic powder.

In another dish, beat egg with fork or wire whisk into the mayonnaise .




Using a pastry brush coat the breast and lay that coated side into the potato mixture. Then brush on the mayo on the side that is up and roll it over to coat both sides.

Place on wax paper. Make sure they do not touch. Let sit for 5 minutes so that the coating adheres to the chicken.


Place on a sprayed rack and put in oven. Bake uncovered 25 minutes. Turn chicken over.


 

Slide in the tray with the vegetables. Bake 20 minutes longer or until coating is golden brown. Make sure the thermometer reads 170°F .


Place on a platter and let rest for 10 minutes before serving. Be sure to cut the twine before serving!

Since the oven is set on 400, slave also put in some vegetables and sweet potato fries to roast along side. Everything comes out around the same time. Just watch so the vegetables don't burn.



The combination of sharp red onion with sweetness of the cranberries and background of cream cheese is an unexpected joy!
