Chicken Tumblers

 
You have often read where I urge you to never let things sit in the refrigerator. This is a case where slave noticed some left over cream cheese spread also some port cheddar spread. The chicken breasts were very thin so everything just said: “Let them roll up” Hence: chicken tumblers.

Any cream cheese spread will work, in fact you could also use some ricotta if you had any of that left over!



Let the chicken roll up around the cheese then wrap a piece of bacon around it. Easy right? Oh what a taste!



Ingredients:

About 3 lbs of chicken crests tenders (that have been cut thin)
3 pieces of bacon (cut in half)
about 1 -2 oz of left over cream cheese spread
about 1 – 2 oz of left over cheddar spread
2 tbs light mayonnaise
1 tbs maple syrup
toothpicks


Directions:
Heat oven to 350°F.
Lay out some wax paper on the counter. Spray a 9 x 13 baking dish.



Arrange the pieces of chicken on the paper. With a table knife, spread some cheese on each piece. Then roll it up. Wrap a half piece of bacon around it secured with a toothpick. Place each roll into the dish.
 

In a small bowl mix the syrup into the mayonnaise. Using a pastry brush, paint the ends of each roll. Bake for 35 – 40 minutes.
Turn the oven to broiler. When that is hot put the dish under but at least 5 inches from the element. Let that cook for about 5 minutes to make sure the bacon is nice and crispy, turning for another 5 minutes.

This simple and quick meal is fantastic!
