EZ Rice Pudding

Here is a quick trick to use up left-over rice. Turn it into a desert. Easy to make.


For a different touch try using dried cranberries in the place of raisins!



Ingredients:
  • 1½ cups cooked rice
  • ¼ cup raisins
  • 3 eggs
  • 1½ cups milk
  • ½ cup sugar
  • ½ teaspoon Apple Pie spice

Directions


Pre heat oven to 375° Place a small bowl with about 1 inch of water into the oven on the side. Do this any time you bake a custard.




  1. Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, and sugar: pour over rice. Mix well. Sprinkle top with apple pie spice. 


     
  1. Bake, uncovered 45-50 minutes or until a knife inserted in the center comes out clean. Cool.
  2. Refrigerate leftovers. Yield: 4-6 servings.

The unexpected taste of cranberries make this a real treat to serve Master.
