Preparing the cake pans

We are going to bake a cake. So slave thought first it should post the right way to get things ready

Pre-heat your oven!

slave knows that there are cake pans that are non-stick. There are cooking sprays that not only add oil but also dust with flour. Wonderful. Slave does not recommend them. This is the way slave was taught so this is the way slave teaches.



Slave uses the stick form of butter substitute, in this case it is a blend. Fold back the wrapper and rub the stick over the bottom and sides of the pan. Yes, it can get messy. However don't tell me that's the first time you have had grease on your hands! You don't worry about putting too much on there because too much wont stick!

Then drop about 3 or 4 tablespoons on flour in the pan. Next you tap and tilt. Its kinda like you see guys panning for gold. Just be gentle. Don’t knock it hard, a tapping will do.


Now your pan is ready for the cake batter.

Baking is more about chemistry than regular cooking. slave showed you last time about making your own baking powder. What does it do? If you look closely at a piece of bread or a cake or even some types of cookies. Did you notice those little holes in there? Baking powder makes those tiny bubbles of CO2 to form lifting or leavening the product. Most are formed as soon as it touches liquid. Some slow acting or double acting baking powder doesn't release the last third of the bubbles until it reaches a cooking temperature.

Why did slave bother you with that? Because it lets you know that as soon as the batter is mixed, you want to get it in the pan and in the oven before that last release. So make sure oven is up to the right temperature and the pans are ready before you mix!
