Louisville Kentucky is known for a hot open-faced turkey sandwich called a “Hot Brown”. Here is a simple version done in the oven.

This is an excellent brunch dish with a different look. Cut into fourths and serve with a spatula.

14 oz. Smoked turkey ( sliced bologna thick)
3 or 4 sliced Roma tomatoes
5 or 6 slices crisp cook bacon
1 cup of shredded cheese
1 tube pizza dough
1 tube croissant dough
1 egg for a wash

pre heat oven to 350 degrees
Slice the roma tomatoes. Spray a 9 x 9 baking dish
Cook the bacon until crisp and drain.

Unroll the pizza dough and press into the bottom of the baking dish. Cut it with a table knife to fit.
Make a layer of turkey
A layer of tomatoes
Spread with a few slices of bacon for a layer,
then ½ of the cheese.

Add a second layer of turkey, tomatoes, bacon and cheese ( reserve a bit of cheese for the top.

Roll out the croissant dough for a lid.
Brush with an egg wash and sprinkle with last of cheese
Cover with foil and bake for about 45 minutes.

Cut into fourths and serve with a spatula.

What a wonderful surprise!
