Lemony Lady Cheesecakes

One of the ladies that slave plays cards with, Ruth, is having a birthday! We are making plans for a surprise party on Friday. Slave thought individual cheesecakes might be fun.


These fun bites start with a cookie for a crust. A simple and lower fat version of a cheese cake, then top each with a dab of frosting with broken cookie mixed in!


Filling
Two (5oz) non-fat lemon flavored Greek yogurt
Two (8-ounce) package low fat cream cheese, at room temperature
1 cup sugar
3 eggs
1½ teaspoons pure vanilla extract
Pinch of cinnamon
Pinch of salt
1 tub lemon flavored whipped frosting


Preheat the oven to 375°F. Place muffin paper cups in the muffin tin. Place 1 cookie in each cup of tin. Place a pan of water in the oven.


Make the cheesecakes: In a large bowl, combine the yogurt with the cream cheese and sugar and mix until smooth, 1 to 2 minutes.

Add the eggs, vanilla extract, cinnamon and salt, and continue to beat until the batter is smooth and combined, 1 minute more.



Scoop ⅓ cup cheesecake filling onto each cup. Bake until the custard is lightly golden and set at the edges but still slightly jiggly in the center, 15 to 20 minutes.


Cool completely and then remove the cheesecakes to rack for decorating.



Scoop out about 1 cup of frosting into bowl. Break cookies into 3 or 4 pieces each and stir into frosting.


Spoon onto each cheese cake and refrigerate until firm, at least 30 minutes. Refrigerate until ready to serve.
