Swedish Meatballs

These are the second most famous meatballs you will find in most recipe collections. Served here simply with a side of a green vegetable, this is a great creamy meal that is easy to assemble. (unlike most of IKEA's offerings) When slave decided on meatballs for tonight, naturally IKEA came up. Yes that world famous Swedish furniture store sells thousands of meatballs everyday!


Slave ask Master if He had any IKEA jokes for this post. He replied: “You'll have to put them together yourself, slave!” It is such a treat having a Master that can think that fast!!


Ingredients

  • 1 pound ground beef
  • small pkg fresh mushrooms
  • ¼ cup panko bread crumbs
  • ¼ cup minced onion
  • 2 egg yolks
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (12 fluid ounce) can evaporated milk
  • 1 tsp salt
  • 1 cup sour cream
  • ½ pkg egg noodles

Directions

Preheat oven to 350 degrees F

Do your cutting. Finely chop the onion, slave keeps some frozen in a plastic bag. This will chop much finer than fresh onion.
Rinse the mushrooms and drain well.

Put the water on to boil for the noodles.
In a large bowl: Mix together the ground beef, bread crumbs, egg yolks, and minced onion. Set aside for about 5 minutes.

In a large skillet, brown the mushrooms over medium heat, about 8 minutes. You want the moisture to cook out.


Lay out some foil on the counter and scoop out enough meat mixture to make a small ball about 1 inch across. Slave uses a small scoop for this. You will end up with about 24. Add just about ½ cup of water to the bowl the meat was in, this is to dip your fingers in – not the meat balls! Damp fingers will roll the meat nicely and place them back onto the foil ready for the pan.

In another large bowl mix the soups and the sour cream until well blended.


Keep an eye on the pasta water and cook the noodles to the shortest time listed. (if is says 5 – 7 minutes: cook them for 5) Then drain.

AS the mushrooms finish in the skillet lift them out with a slotted spoon and drop them into the soup mixture.


Add the meatballs to the pan and let them cook about 10 minutes. Roll them around often to brown on all sides.
As they cook, spray a 9 x 13 baking dish. Mix noodles with the soup mixture and spoon into the dish.


When the meatballs are ready put them on top of the noodles and push them down into the dish.

    Bake at 350 degrees F for about 25 to 30 minutes.

This gives you plenty of time to set the table and microwave the green vegetables.


This makes a very pretty presentation for you Master. It is an easy dish to prepare and has a taste that will impress.
