Rusty Chicken Thighs

A slightly different take on baking chicken thighs. This dish is called “Rusty Chicken” because of the marinade. No one flavor dominates and it ends up not tasting like what you thought. So different Chefs just decided to name it after the color and not the ingredients! Don't let the marinade fool you it works very well! A great tasting chicken meal for pennies and most of the ingredients are right there in your cupboard already.




Ingredients:
4-5 cloves garlic minced
1 yellow onion sliced thin
¼ tsp red pepper flakes
2 tablespoons maple syrup
2 tablespoons soy sauce
2 tablespoons mayonnaise
1 teaspoon of smoked paprika
1 tablespoons balsamic vinegar
salt and freshly ground black pepper to taste
4 - 5 chicken thighs


Directions:

Mince the garlic. Slice the onion on a mandolin slicer carefully.
 

  1. Mix garlic into maple syrup, soy sauce, mayonnaise, and vinegar until marinade is thoroughly combined.
    NOTE anytime you have to measure a sticky syrup, spray the measuring spoon first, and have a damp paper towel ready to wipe off the bottle neck before replacing the cap.


  1. Transfer chicken thighs to zipper bags (if using frozen be sure to take out the wax paper.) Spoon marinade over chicken; seal and mix with fingers until coated. Refrigerate about 3 hours; if preferred a quicker method is to leave them on the counter top sealed in the bag for an hour.


  1. let stand about 30 minutes at room temperature. Pre heat oven to 400 degrees


  1. Spray a baking dish and lay a bed of the onion slices. Place the chicken pieces on this. Slide into the oven for 45 – 55 minutes on 400°. Super juicy, very good flavor! Cooking skin side down first allows the chicken to become firm on that side before flipping over.
  2. Check with thermometer for 150 degrees.
    Change oven to broiler on HIGH Let the chicken finish cooking under the broiler (about 5-7 minutes) The higher heat will react with sugars in the marinade and produce the flavor this dish is noted for.
  3. Transfer chicken to a platter, let rest for 5 minutes, and serve. ==================

*A medium frozen chicken thigh contains 252mg sodium. This is injected as “chicken stock” to make it juicier.




Served this with warmed up green beans and some sauteed broccoli with cherry tomatoes.

Remembered Love
Who does not remember love?
Except the very young
