Simple Submission Salad

Another part of:
The Little Black Book of Indiscreet Recipes”
These are fourteen special dishes created and designed as a tribute to my Master Indy. They are being presented one a day for the two weeks leading up to the second anniversary serving Master. The Man who, when He wishes to exert it, has total control over my life. ...and I would have it no other way!

Ingredients:

2 cups Cherry tomatoes
Celery cut into 1 inch pieces (about 2 cups)
1 small onion thinly sliced

Dressing by a fresh HO-made Italian :-)
2 Tablespoons White wine Balsamic vinegar
2 Tablespoons Peanut Oil
1 Tablespoon juice from Sweet pickles
1 Tablespoon Lemon juice
2 teaspoons Dijon Mustard
2 small cloves garlic minced finely
1/8 teaspoon Dried Basil
2 pinches sugar. Kosher salt and pepper to taste.

Directions:

Whisk together ingredients for dressing, let sit to blend flavors.
Wash cherry tomatoes and celery in a bath of vinegar water. (approx. 1/8 cup vinegar to 6 cups water. Let sit for 7 minutes, then swish to clean and rinse well.
Thinly slice the onion – CAREFULLY!
Mix the tomatoes, celery and onion in a serving bowl. Drizzle with the dressing, and serve. Can be kept separately overnight in refrigerator to blend tastes before mixing well for guests.

Also great with crumbled blue cheese as garnish. Or Parmesan Cheese.
